Blue corn and bananas
Breakfast of champions. Blue corn pancakes with maple syrup, blueberries and bananas. I used my own homegrown blue corn which I nixtamalized, (following a YouTube video) and then ground myself in a kitchen processor. Cornmeal is mixed with equal parts chickpea flour to help the pancakes bind and raise the protein level. Liquid can be plant or dairy milk or even just water. A dash of cooking oil. I used olive oil because I don't mind the taste. Baking powder for leavening. Th
