Saturday not-going-to-coffee-shop treat: vegan, gluten free date slices.

ree

While my genetic heritage is complex, reflecting many ancestral migrations, I picked the dna thread that links me (according to Nat Geo Genome project) to the ancient Fertile Crescent between Persian Gulf and Mediterranean Sea. This is the agricultural cradle of civilization between the Tigris and Euphrates rivers (Sumer/Mesopotamia) I imagined what would be available while scanning my pantry: maybe dates, oats, almonds? (I’m not an ancient historian so not qualified to say this is true)

I add libbed a baked treat with a crumbly crust under and over of oats, almond flour and almond butter made fragrant with cardamom and cinnamon.

ree

Date paste made by soaking medjool dates overnight then mashing with a spoon.

Baking time was a yes no maybe thing. Chewy, date-sweet, treats!

Happy Saturday.
