Green chile roasting has begun in the Chile Capital of the World: Hatch, New Mexico

It was early in the day when I passed through the little agricultural town. The roaster fires had not yet been lit, so I didn’t get to experience that exquisite smell of roasting chile but there was a palpable sense of immanence.

A sacrament of first fruits. Repeated seasonally.
